Sweet potato leek scramble

Sweet potato leek scramble

1/4 cup diced sweet potato*

2 tbsp. sliced leeks*

Butter

2 eggs

Salt, pepper

Rub nonstick pan with butter. Saute veggies over medium heat.

Reduce heat to low.

Whisk 2 eggs, salt and pepper. Add to pan. Cook, stirring occasionally, until eggs are almost set. Remove from heat and serve.
